Ingredients:

  • 3 large carrots, scrubbed and chopped (approx. 150g)
  • 2 medium Granny Smith or Gala apples, cored (approx. 300g)
  • 1 inch piece of fresh ginger, peeled
  • 1/2 lemon, juiced (15ml)
  • 1 small orange, peeled (100g)
  • 120ml filtered water (if using a blender)

Instructions:

  1. Scrub the carrots and apples under cold water until all surface soil and wax are gone.
  2. Cut carrots into 2 inch chunks and apples into quarters, removing the apple cores.
  3. Peel the fresh ginger using the edge of a spoon Note: this removes only the skin, keeping the nutrient dense flesh.
  4. If using a juicer, feed the ingredients into the chute in an alternating pattern: carrot, apple, ginger, then carrot again until all produce is processed.
  5. If using a blender, place chopped carrots, apples, and ginger into the carafe with 120ml of filtered water.
  6. Blend on high until the mixture is a smooth puree.
  7. Strain the mixture through a nut milk bag or cheesecloth, squeezing firmly until only dry pulp remains.
  8. Stir in the fresh lemon juice and orange juice.
  9. Give the juice a quick stir to incorporate nutrients and pour into a chilled glass.
