Ingredients:

  • 2 large ripe but firm avocados
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions:

  1. Halve the avocados and remove the pits. Slice each half into 6-8 uniform wedges, approximately 1/2 inch thick.
  2. Set up a dredging station with three bowls: Bowl 1 with flour, salt, and pepper; Bowl 2 with beaten eggs; Bowl 3 with Panko, paprika, and garlic powder.
  3. Gently press each avocado slice into the flour, shaking off any excess.
  4. Dip the floured avocado slice into the beaten eggs until fully submerged.
  5. Press the slice firmly into the Panko mixture, ensuring all surfaces are completely covered in breadcrumbs.
  6. Place the coated fries in a single layer on a parchment-lined baking sheet, leaving 1 inch of space between each slice.
  7. Lightly drizzle the tops of the fries with olive oil to ensure even browning.
  8. Bake at 400°F (200°C) for 10 minutes. Use tongs to carefully flip each fry and bake for another 8-10 minutes until deep golden-brown.
