- 2 large ripe but firm avocados
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions:
- Halve the avocados and remove the pits. Slice each half into 6-8 uniform wedges, approximately 1/2 inch thick.
- Set up a dredging station with three bowls: Bowl 1 with flour, salt, and pepper; Bowl 2 with beaten eggs; Bowl 3 with Panko, paprika, and garlic powder.
- Gently press each avocado slice into the flour, shaking off any excess.
- Dip the floured avocado slice into the beaten eggs until fully submerged.
- Press the slice firmly into the Panko mixture, ensuring all surfaces are completely covered in breadcrumbs.
- Place the coated fries in a single layer on a parchment-lined baking sheet, leaving 1 inch of space between each slice.
- Lightly drizzle the tops of the fries with olive oil to ensure even browning.
- Bake at 400°F (200°C) for 10 minutes. Use tongs to carefully flip each fry and bake for another 8-10 minutes until deep golden-brown.
