Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano

Instructions:

  1. Place chicken breasts between two sheets of plastic wrap and use a meat mallet to pound the thickest part until the meat is a uniform thickness of about 3/4 inch.
  2. Pat the chicken completely dry with paper towels. Rub both sides with olive oil, then evenly coat with the seasoning blend, pressing the spices into the meat.
  3. Arrange chicken on a parchment-lined baking tray. Bake at 425°F (218°C) for 18–22 minutes. Remove from the oven the moment the internal temperature hits 160°F (71°C).
  4. Transfer the chicken to a plate and cover loosely with foil. Let it rest for 5–10 minutes to allow juices to reabsorb.
