Ingredients:
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
Instructions:
- Place chicken breasts between two sheets of plastic wrap and use a meat mallet to pound the thickest part until the meat is a uniform thickness of about 3/4 inch.
- Pat the chicken completely dry with paper towels. Rub both sides with olive oil, then evenly coat with the seasoning blend, pressing the spices into the meat.
- Arrange chicken on a parchment-lined baking tray. Bake at 425°F (218°C) for 18–22 minutes. Remove from the oven the moment the internal temperature hits 160°F (71°C).
- Transfer the chicken to a plate and cover loosely with foil. Let it rest for 5–10 minutes to allow juices to reabsorb.
