Ingredients:
- 2 large ripe bananas, mashed (approx. 1 cup / 225g)
- 1 cup (120g) whole wheat flour
- ½ cup (75g) fresh blueberries
- 1 tsp (5g) baking powder
- ¼ tsp (1.5g) salt
- 1 tbsp (15ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 3 tbsp (45ml) coconut oil
Instructions:
- In a large bowl, mash the ripe bananas until a relatively smooth paste forms with only a few small lumps.
- Whisk in the maple syrup and vanilla extract until well combined.
- Sift the whole wheat flour, baking powder, and salt directly over the banana mixture. Stir with a spatula until just combined—do not overmix.
- Gently fold in the fresh blueberries using a light hand to ensure the berries stay whole.
- Place a skillet over medium-high heat and add the oil. Wait until the oil shimmers or a drop of batter sizzles immediately upon contact.
- Drop rounded tablespoons of batter into the pan, spacing them about an inch apart, and flatten slightly with the back of the spoon.
- Fry for 2–3 minutes per side until the edges are a deep golden-brown mahogany color.
- Transfer the fritters to a paper-towel lined plate to drain.
