Ingredients:

  • 2 large ripe bananas, mashed (approx. 1 cup / 225g)
  • 1 cup (120g) whole wheat flour
  • ½ cup (75g) fresh blueberries
  • 1 tsp (5g) baking powder
  • ¼ tsp (1.5g) salt
  • 1 tbsp (15ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 3 tbsp (45ml) coconut oil

Instructions:

  1. In a large bowl, mash the ripe bananas until a relatively smooth paste forms with only a few small lumps.
  2. Whisk in the maple syrup and vanilla extract until well combined.
  3. Sift the whole wheat flour, baking powder, and salt directly over the banana mixture. Stir with a spatula until just combined—do not overmix.
  4. Gently fold in the fresh blueberries using a light hand to ensure the berries stay whole.
  5. Place a skillet over medium-high heat and add the oil. Wait until the oil shimmers or a drop of batter sizzles immediately upon contact.
  6. Drop rounded tablespoons of batter into the pan, spacing them about an inch apart, and flatten slightly with the back of the spoon.
  7. Fry for 2–3 minutes per side until the edges are a deep golden-brown mahogany color.
  8. Transfer the fritters to a paper-towel lined plate to drain.
