Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) packed brown sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (120g) old-fashioned rolled oats
- 2 tbsp (14g) ground flaxseed meal
- 2 tbsp (12g) brewer's yeast
- 1/2 tsp (3g) ground cinnamon
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (85g) semi-sweet chocolate chips
Instructions:
- Cream together the softened butter and brown sugar until the mixture looks pale and fluffy.
- Beat in the egg and vanilla extract until the batter is smooth and cohesive.
- Whisk the cinnamon, baking soda, salt, brewer's yeast, and flaxseed meal into the wet ingredients.
- Gently fold in the rolled oats and chocolate chips using a spatula until no dry streaks remain.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 10–12 minutes until edges are firm and mahogany-brown, but centers remain slightly soft.
