Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (115g) melted unsalted butter, cooled
  • 2 large eggs (100g)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (225g) grated zucchini
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 tbsp (8g) all-purpose flour

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
  2. In a medium bowl, whisk together the 250g all-purpose flour, 5g baking soda, 3g salt, and 150g granulated sugar until uniform.
  3. In a large bowl, whisk the 115g melted butter, 100g eggs, 120g Greek yogurt, and 5ml vanilla extract until smooth, then fold in the 225g grated zucchini.
  4. Pour the dry ingredients into the wet mixture and stir with a spatula until just combined; do not over-mix.
  5. Toss the 170g semi-sweet chocolate chips in 8g all-purpose flour, then gently fold them into the batter.
  6. Divide the batter evenly among the 12 liners and bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
