Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 3/4 cup (150g) granulated sugar
- 1/2 cup (115g) melted unsalted butter, cooled
- 2 large eggs (100g)
- 1/2 cup (120g) plain Greek yogurt
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) grated zucchini
- 1 cup (170g) semi-sweet chocolate chips
- 1 tbsp (8g) all-purpose flour
Instructions:
- Preheat the oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
- In a medium bowl, whisk together the 250g all-purpose flour, 5g baking soda, 3g salt, and 150g granulated sugar until uniform.
- In a large bowl, whisk the 115g melted butter, 100g eggs, 120g Greek yogurt, and 5ml vanilla extract until smooth, then fold in the 225g grated zucchini.
- Pour the dry ingredients into the wet mixture and stir with a spatula until just combined; do not over-mix.
- Toss the 170g semi-sweet chocolate chips in 8g all-purpose flour, then gently fold them into the batter.
- Divide the batter evenly among the 12 liners and bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
