Ingredients:

  • 1 cup (150g) frozen avocado chunks
  • 1 frozen banana (120g), broken into pieces
  • 2 cups (60g) fresh baby spinach
  • 1/2 cup (120ml) unsweetened almond milk
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) vanilla extract
  • 1/2 cup (75g) fresh blueberries
  • 2 tbsp (15g) hemp seeds
  • 1 tbsp (10g) sliced almonds
  • 1 tsp (5g) shredded unsweetened coconut

Instructions:

  1. Place the almond milk, lemon juice, vanilla, spinach, frozen avocado, and frozen banana into a high-speed blender in that specific order to prevent frozen ingredients from sticking to the blades.
  2. Start the blender on the lowest speed, using the tamper to push the frozen fruit down. Gradually increase to high and blend for 45–60 seconds until the mixture is completely smooth and holds a soft-peak shape.
  3. Divide the mixture evenly between two chilled bowls. Use the back of a spoon to create a swirl on the surface, then top with blueberries, hemp seeds, sliced almonds, and shredded coconut.
