Ingredients:

  • 1/2 cup (115g) mayonnaise
  • 1/2 cup (120g) plain Greek yogurt
  • 2 tbsp (30g) chipotle peppers in adobo, finely chopped
  • 1 tbsp (15ml) adobo sauce
  • 1 tbsp (15ml) fresh lime juice
  • 1/2 tsp (3g) garlic powder
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Carefully remove two chipotle peppers from the can and finely mince them.
  2. Combine the mayonnaise, Greek yogurt, minced chipotles, adobo sauce, lime juice, garlic powder, and salt in a blender or food processor.
  3. Process on high for 30–60 seconds until the color is a uniform, mahogany-orange and the texture is completely smooth.
  4. Taste the sauce; if too spicy, add an extra tablespoon of Greek yogurt; if it lacks zing, add more lime juice.
