Ingredients:
- 2 cups (300g) pitted Medjool dates, packed
- 1 cup (120g) raw walnuts
- 1/4 tsp (1.5g) fine sea salt
- 1 tsp (5ml) vanilla extract
- 1/2 cup (90g) dark chocolate chips (70% cocoa)
- 1 tbsp (14g) coconut oil, melted
Instructions:
- Pulse the raw walnuts in the food processor until they are broken into small, pebble-sized pieces.
- Add the pitted dates, sea salt, and vanilla extract to the food processor. Blend on high until the mixture clumps together into a sticky, heavy ball that pulls away from the sides of the bowl.
- Line an 8x4 inch loaf pan with parchment paper. Transfer the date mixture into the pan and press down firmly using a spatula or the bottom of a glass until the surface is perfectly flat.
- Melt the dark chocolate chips and coconut oil together in the microwave in 30-second bursts, stirring in between.
- Pour the melted chocolate mixture over the pressed date base, tilting the pan to ensure full coverage.
- Place the pan in the freezer for 60 minutes until the chocolate is firm.
- Lift the parchment paper out of the pan and use a sharp knife to slice the block into 12 equal rectangles.
