Ingredients:

  • 2 cups (300g) pitted Medjool dates, packed
  • 1 cup (120g) raw walnuts
  • 1/4 tsp (1.5g) fine sea salt
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (90g) dark chocolate chips (70% cocoa)
  • 1 tbsp (14g) coconut oil, melted

Instructions:

  1. Pulse the raw walnuts in the food processor until they are broken into small, pebble-sized pieces.
  2. Add the pitted dates, sea salt, and vanilla extract to the food processor. Blend on high until the mixture clumps together into a sticky, heavy ball that pulls away from the sides of the bowl.
  3. Line an 8x4 inch loaf pan with parchment paper. Transfer the date mixture into the pan and press down firmly using a spatula or the bottom of a glass until the surface is perfectly flat.
  4. Melt the dark chocolate chips and coconut oil together in the microwave in 30-second bursts, stirring in between.
  5. Pour the melted chocolate mixture over the pressed date base, tilting the pan to ensure full coverage.
  6. Place the pan in the freezer for 60 minutes until the chocolate is firm.
  7. Lift the parchment paper out of the pan and use a sharp knife to slice the block into 12 equal rectangles.
