Ingredients:
- 2 cups (180g) Old Fashioned Rolled Oats
- 1/2 cup (60g) Ground Flaxseed Meal
- 2 tbsp (20g) Chia Seeds
- 1/2 tsp Sea Salt
- 1/2 tsp Ground Cinnamon
- 1 cup (200g) Medjool Dates, pitted and soaked in warm water
- 1/2 cup (128g) Creamy Peanut Butter or Almond Butter
- 1/4 cup (85g) Raw Honey or Maple Syrup
- 1 tsp Pure Vanilla Extract
- 1/2 cup (90g) Dark Chocolate Chips
- 1/4 cup (30g) Shredded Unsweetened Coconut
Instructions:
- Drain the soaked dates and place them in the food processor. Pulse until they form a thick, sticky paste to act as the primary binder.
- In a large mixing bowl, whisk together the oats, flaxseed meal, chia seeds, salt, and cinnamon until evenly distributed.
- Add the date paste, nut butter, honey, and vanilla to the dry mixture. Fold using a spatula or clean hands until the dough holds together when squeezed.
