Ingredients:

  • 2 cups (180g) Old Fashioned Rolled Oats
  • 1/2 cup (60g) Ground Flaxseed Meal
  • 2 tbsp (20g) Chia Seeds
  • 1/2 tsp Sea Salt
  • 1/2 tsp Ground Cinnamon
  • 1 cup (200g) Medjool Dates, pitted and soaked in warm water
  • 1/2 cup (128g) Creamy Peanut Butter or Almond Butter
  • 1/4 cup (85g) Raw Honey or Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1/2 cup (90g) Dark Chocolate Chips
  • 1/4 cup (30g) Shredded Unsweetened Coconut

Instructions:

  1. Drain the soaked dates and place them in the food processor. Pulse until they form a thick, sticky paste to act as the primary binder.
  2. In a large mixing bowl, whisk together the oats, flaxseed meal, chia seeds, salt, and cinnamon until evenly distributed.
  3. Add the date paste, nut butter, honey, and vanilla to the dry mixture. Fold using a spatula or clean hands until the dough holds together when squeezed.
