Ingredients:
- 1 lb prepared sugar cookies
- 8 oz full-fat cream cheese, softened
- 1 tsp pure vanilla extract
- 12 oz white chocolate melting wafers
- 2 tsp coconut oil
- 3 tbsp festive nonpareils or sprinkles
Instructions:
- Place sugar cookies into a food processor and pulse until they reach the consistency of fine, dry sand.
- In a large bowl, beat the softened cream cheese until smooth and aerated. Gradually fold in the cookie crumbs and vanilla extract until a stiff dough forms.
- Scoop 1-tablespoon mounds and roll between palms to create smooth spheres. Place on a parchment-lined baking sheet and chill in the freezer for 15-20 minutes.
- Melt white chocolate with coconut oil in the microwave in 30-second bursts, stirring until fluid and smooth.
- Dip chilled cookie balls into the melted chocolate using a fork. Tap off excess chocolate and immediately top with sprinkles before the coating sets.
