Ingredients:

  • 1 lb prepared sugar cookies
  • 8 oz full-fat cream cheese, softened
  • 1 tsp pure vanilla extract
  • 12 oz white chocolate melting wafers
  • 2 tsp coconut oil
  • 3 tbsp festive nonpareils or sprinkles

Instructions:

  1. Place sugar cookies into a food processor and pulse until they reach the consistency of fine, dry sand.
  2. In a large bowl, beat the softened cream cheese until smooth and aerated. Gradually fold in the cookie crumbs and vanilla extract until a stiff dough forms.
  3. Scoop 1-tablespoon mounds and roll between palms to create smooth spheres. Place on a parchment-lined baking sheet and chill in the freezer for 15-20 minutes.
  4. Melt white chocolate with coconut oil in the microwave in 30-second bursts, stirring until fluid and smooth.
  5. Dip chilled cookie balls into the melted chocolate using a fork. Tap off excess chocolate and immediately top with sprinkles before the coating sets.
