Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.75 cup (150g) brown sugar, packed
  • 1 tsp (5g) baking soda
  • 1 tsp (5g) baking powder
  • 0.5 tsp (3g) kosher salt
  • 3 large (225g) overripe bananas, mashed
  • 1/3 cup (80ml) melted coconut oil
  • 1/3 cup (80g) plain Greek yogurt
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15ml) lemon juice
  • 0.5 cup (75g) semi-sweet chocolate chips
  • 0.5 cup (60g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a 12-cup standard muffin tin with paper liners or grease thoroughly with oil.
  2. In a large mixing bowl, mash the bananas until they reach a velvety consistency. Stir in the melted coconut oil, Greek yogurt, vanilla extract, and lemon juice, whisking until the mixture is smooth and emulsified.
  3. Sift the all-purpose flour, brown sugar, baking soda, baking powder, and kosher salt directly into the wet ingredients. Gently fold the mixture together with a spatula until no streaks of dry flour remain.
  4. Fold in the semi-sweet chocolate chips and chopped walnuts.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
