Ingredients:
- 14 large Medjool dates, pitted and packed
- 1.5 cups Old Fashioned Rolled Oats
- 0.5 cup Creamy Almond Butter, unsalted
- 2 tbsp Ground Flaxseed
- 2 tbsp Hemp Hearts
- 0.25 tsp Coarse Sea Salt
- 1 tsp Pure Vanilla Extract
- 0.33 cup Mini Dark Chocolate Chips (70% cocoa)
- 1 tbsp Chia Seeds
Instructions:
- Place the 14 pitted dates into the processor and pulse until a thick, sticky paste forms. Note: This paste should clump together into a single ball as the blade spins.
- Add the almond butter. Pour in the 0.5 cup almond butter and vanilla extract. Process until velvety and smooth.
- Incorporate the fiber. Add the 1.5 cups of oats, flaxseed, and salt. Pulse 10-12 times. Note: You want the oats broken down slightly but not turned into flour.
- Add the superfoods. Sprinkle in the hemp hearts and chia seeds. Pulse 3-4 times just to distribute them.
- Check the consistency. Take a small piece of dough and squeeze it. It should hold its shape perfectly without crumbling or sticking excessively to your fingers.
- Fold in chocolate. Stir in the mini chocolate chips by hand using a spatula. Ensure they are evenly distributed throughout the dough.
- Port the mixture. Use your scoop to drop 20 mounds onto your prepared parchment paper.
- Roll into spheres. Roll each mound between your palms until smooth and round.
- Set the bites. Place the tray in the refrigerator for at least 20 minutes. This allows the oats to hydrate and the fats to firm up.
- Final Storage. Transfer the chilled bites into an airtight container for Long-Term use.
