Ingredients:
- 1 large ripe avocado (approx. 200g), pitted and peeled
- 0.5 cup (120ml) pure maple syrup
- 1 large egg
- 1 tsp (5ml) pure vanilla extract
- 0.5 cup (45g) unsweetened cocoa powder
- 0.5 cup (65g) almond flour
- 0.5 tsp baking soda
- 0.25 tsp sea salt
- 0.5 cup (90g) dark chocolate chips (70% cocoa)
Instructions:
- Preheat your oven to 180°C. Note: This ensures the leavening agent activates immediately upon entry.
- Line an 8x8 inch pan with parchment paper.
- Puree 1 large avocado (200g) in a food processor until smooth and velvety.
- Whisk 120ml maple syrup, 1 egg, and 5ml vanilla into the puree until fully incorporated.
- Sift 45g cocoa powder, 65g almond flour, 0.5 tsp baking soda, and 0.25 tsp salt into a separate bowl.
- Fold the dry ingredients into the wet batter until no dry streaks remain.
- Stir in 90g dark chocolate chips gently.
- Spread the batter evenly into your prepared pan.
- Bake for 25 minutes until the edges are set and a toothpick comes out mostly clean.
- Cool completely in the pan until the structure is firm enough to slice.
