Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup unsulphured molasses
  • 2 1/4 cups all-purpose flour
  • 3 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated sugar

Instructions:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter and brown sugar on medium-high speed until pale and fluffy.
  3. Beat in the egg and molasses for one minute until the batter is smooth and mahogany-colored.
  4. In a separate bowl, whisk together all-purpose flour, 2 tsp ground ginger, cinnamon, cloves, baking soda, and salt.
  5. Gradually stir dry ingredients into the wet batter using a spatula; mix only until flour streaks disappear to avoid overmixing.
  6. In a small bowl, combine granulated sugar and 1 tsp ground ginger.
  7. Scoop 1 tablespoon of dough, roll into a ball, roll in the ginger-sugar mixture, and place on the baking sheet.
  8. Bake for 10 minutes or until the edges are set but the centers remain soft.
