Ingredients:
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/4 cup unsulphured molasses
- 2 1/4 cups all-purpose flour
- 3 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup granulated sugar
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat softened butter and brown sugar on medium-high speed until pale and fluffy.
- Beat in the egg and molasses for one minute until the batter is smooth and mahogany-colored.
- In a separate bowl, whisk together all-purpose flour, 2 tsp ground ginger, cinnamon, cloves, baking soda, and salt.
- Gradually stir dry ingredients into the wet batter using a spatula; mix only until flour streaks disappear to avoid overmixing.
- In a small bowl, combine granulated sugar and 1 tsp ground ginger.
- Scoop 1 tablespoon of dough, roll into a ball, roll in the ginger-sugar mixture, and place on the baking sheet.
- Bake for 10 minutes or until the edges are set but the centers remain soft.
