Ingredients:

  • 2 ripe avocados (approx. 12 oz / 340g), diced into 1-inch cubes
  • 1 cup (150g) cherry tomatoes, halved
  • 1 small (60g) red onion, finely diced
  • 1 cup (60g) English cucumber, diced
  • 1/4 cup (10g) fresh cilantro, chopped
  • 2 tbsp (30ml) extra virgin olive oil
  • 1 tbsp (15ml) fresh lime juice
  • 1 tsp (5g) honey
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 1/4 tsp (1g) red pepper flakes

Instructions:

  1. Dice the red onion and cucumber, then halve the cherry tomatoes. Place these vegetables into a large mixing bowl.
  2. In a small jar or bowl, whisk together the extra virgin olive oil, lime juice, honey, sea salt, and black pepper until the mixture is opaque and slightly thickened.
  3. Pour the dressing over the cucumber, onion, and tomatoes and toss to coat evenly.
  4. Add the diced avocado to the bowl and gently fold it into the mixture using a silicone spatula or large spoon until coated, ensuring the cubes remain intact.
