Ingredients:
- 2 ripe avocados (approx. 12 oz / 340g), diced into 1-inch cubes
- 1 cup (150g) cherry tomatoes, halved
- 1 small (60g) red onion, finely diced
- 1 cup (60g) English cucumber, diced
- 1/4 cup (10g) fresh cilantro, chopped
- 2 tbsp (30ml) extra virgin olive oil
- 1 tbsp (15ml) fresh lime juice
- 1 tsp (5g) honey
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 1/4 tsp (1g) red pepper flakes
Instructions:
- Dice the red onion and cucumber, then halve the cherry tomatoes. Place these vegetables into a large mixing bowl.
- In a small jar or bowl, whisk together the extra virgin olive oil, lime juice, honey, sea salt, and black pepper until the mixture is opaque and slightly thickened.
- Pour the dressing over the cucumber, onion, and tomatoes and toss to coat evenly.
- Add the diced avocado to the bowl and gently fold it into the mixture using a silicone spatula or large spoon until coated, ensuring the cubes remain intact.
