Ingredients:

  • 3 large overripe bananas, mashed (340g)
  • 1/2 cup plain Greek yogurt (120g)
  • 1 large egg (50g)
  • 1/3 cup honey (110g)
  • 1 tsp pure vanilla extract (5ml)
  • 1 cup whole wheat flour (120g)
  • 1/2 cup rolled oats (45g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1 tsp ground cinnamon (2g)
  • 1/2 cup chopped walnuts (60g)
  • 1/2 cup dark chocolate chips (75g)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until mostly smooth, then whisk in the Greek yogurt, egg, honey, and vanilla until a creamy emulsion forms.
  3. Sift the whole wheat flour, rolled oats, baking soda, salt, and cinnamon into the wet ingredients; gently fold with a rubber spatula until just combined.
  4. Fold in the chopped walnuts and dark chocolate chips.
  5. Pour the batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
