Ingredients:

  • 1 can (15 oz / 425g) black beans, rinsed and patted dry
  • 1/2 cup (50g) panko breadcrumbs
  • 1/4 cup (40g) red onion, finely minced
  • 2 cloves (6g) garlic, minced
  • 1 large (50g) egg
  • 1 tbsp (15ml) Worcestershire sauce
  • 1 tsp (2g) smoked paprika
  • 1 tsp (2g) ground cumin
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1 tbsp (15ml) olive oil
  • 4 whole grain buns
  • 1 medium (150g) avocado, sliced
  • 4 slices (60g) red onion, thinly sliced
  • 2 cups (30g) fresh arugula
  • 4 slices (40g) pepper jack cheese

Instructions:

  1. Pulse the black beans, minced onion, and garlic in a food processor until chunky; do not over-process into a puree.
  2. Transfer the bean mixture to a bowl and fold in breadcrumbs, egg, Worcestershire sauce, smoked paprika, cumin, salt, and black pepper until the dough holds together.
  3. Form the mixture into 4 equal patties, approximately 1 inch (2.5cm) thick.
  4. Heat olive oil in a cast-iron skillet over medium-high heat.
  5. Sear patties for 4–5 minutes per side until a dark, crispy crust forms.
  6. Assemble by placing patties on toasted whole grain buns with sliced avocado, red onion, arugula, and pepper jack cheese.
