Ingredients:
- 1 can (15 oz / 425g) black beans, rinsed and patted dry
- 1/2 cup (50g) panko breadcrumbs
- 1/4 cup (40g) red onion, finely minced
- 2 cloves (6g) garlic, minced
- 1 large (50g) egg
- 1 tbsp (15ml) Worcestershire sauce
- 1 tsp (2g) smoked paprika
- 1 tsp (2g) ground cumin
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1 tbsp (15ml) olive oil
- 4 whole grain buns
- 1 medium (150g) avocado, sliced
- 4 slices (60g) red onion, thinly sliced
- 2 cups (30g) fresh arugula
- 4 slices (40g) pepper jack cheese
Instructions:
- Pulse the black beans, minced onion, and garlic in a food processor until chunky; do not over-process into a puree.
- Transfer the bean mixture to a bowl and fold in breadcrumbs, egg, Worcestershire sauce, smoked paprika, cumin, salt, and black pepper until the dough holds together.
- Form the mixture into 4 equal patties, approximately 1 inch (2.5cm) thick.
- Heat olive oil in a cast-iron skillet over medium-high heat.
- Sear patties for 4–5 minutes per side until a dark, crispy crust forms.
- Assemble by placing patties on toasted whole grain buns with sliced avocado, red onion, arugula, and pepper jack cheese.
