Ingredients:
- 1.5 cups (190g) whole wheat pastry flour
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) baking powder
- 1 tbsp (8g) ground cinnamon
- 0.25 tsp (1.5g) fine sea salt
- 0.5 cup (120g) unsweetened applesauce
- 0.5 cup (120ml) pure maple syrup
- 1 large egg (50g)
- 1 tsp (5ml) pure vanilla extract
- 1.5 cups (225g) grated zucchini
- 0.5 cup (60g) chopped walnuts
- 0.5 cup (70g) dark chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- Grate the zucchini using the medium holes of a box grater, keeping the skin on.
- In a large bowl, whisk together the whole wheat pastry flour, baking soda, baking powder, cinnamon, and salt until no clumps remain.
- In a separate bowl, combine the unsweetened applesauce, maple syrup, egg, and vanilla extract. Stir in the grated zucchini.
- Fold the wet mixture into the dry ingredients until just combined; do not overmix to avoid a tough texture.
- Fold in the chopped walnuts and dark chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
