Ingredients:

  • 1.5 cups (190g) whole wheat pastry flour
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) baking powder
  • 1 tbsp (8g) ground cinnamon
  • 0.25 tsp (1.5g) fine sea salt
  • 0.5 cup (120g) unsweetened applesauce
  • 0.5 cup (120ml) pure maple syrup
  • 1 large egg (50g)
  • 1 tsp (5ml) pure vanilla extract
  • 1.5 cups (225g) grated zucchini
  • 0.5 cup (60g) chopped walnuts
  • 0.5 cup (70g) dark chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. Grate the zucchini using the medium holes of a box grater, keeping the skin on.
  3. In a large bowl, whisk together the whole wheat pastry flour, baking soda, baking powder, cinnamon, and salt until no clumps remain.
  4. In a separate bowl, combine the unsweetened applesauce, maple syrup, egg, and vanilla extract. Stir in the grated zucchini.
  5. Fold the wet mixture into the dry ingredients until just combined; do not overmix to avoid a tough texture.
  6. Fold in the chopped walnuts and dark chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
