Ingredients:

  • 1 medium ripe banana
  • 2 tablespoons raw, unsalted almonds
  • 1/4 cup plain low-fat Greek yogurt
  • 1/8 teaspoon ground ginger
  • 1 teaspoon honey

Instructions:

  1. Use a sharp knife to carefully slice 2 tablespoons of raw, unsalted almonds into thin slivers.
  2. In a small bowl, mix 1 teaspoon of honey with 1/8 teaspoon of ground ginger until fully incorporated and no dry clumps remain.
  3. Add 1/4 cup plain low-fat Greek yogurt to the honey ginger mixture.
  4. Peel 1 medium ripe banana and cut it into 1 cm thick rounds.
  5. Arrange the banana slices in a single layer at the bottom of the bowl or slightly overlapping.
  6. Spoon the yogurt mixture over the center of the banana slices.
  7. Sprinkle the sliced almonds over the top.
  8. Let the snack sit for 60 seconds before eating.
