Ingredients:
- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup liquid egg whites
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb ground turkey sausage
- 1 cup diced bell peppers
- 1 cup diced spinach
- 1 cup shredded sharp cheddar cheese
- 1 tbsp olive oil
Instructions:
- Place the cottage cheese, whole eggs, egg whites, salt, and pepper into a blender. Process for 30–60 seconds until the mixture is completely smooth and aerated.
- Heat olive oil in a skillet over medium-high heat. Add ground turkey sausage, cooking until browned.
- Stir in the diced bell peppers and spinach. Sauté for 3–4 minutes until the peppers are tender-crisp and the spinach has wilted.
- Divide the cooked sausage and vegetable mixture evenly among 4 oven-safe bowls.
- Pour the blended egg mixture over the fillings until the bowls are 3/4 full. Sprinkle each with 1/4 cup of shredded cheddar cheese.
- Bake at 375°F (190°C) for 12–15 minutes until the centers are set and the cheese is golden-brown.
