Ingredients:

  • 1 lb lean ground beef (90% lean)
  • 1 large egg, beaten
  • 1/2 cup seasoned breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup honey
  • 1/4 cup reduced sodium soy sauce
  • 3 cloves fresh garlic, minced
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger, grated

Instructions:

  1. Combine the lean beef, beaten egg, breadcrumbs, garlic powder, salt, and pepper in a medium mixing bowl. Mix gently by hand and roll into 1-inch spheres.
  2. Heat a large non-stick skillet over medium-high heat. Add the meatballs and brown on all sides until they reach a deep mahogany color and a firm exterior, approximately 7-9 minutes.
  3. Lower the heat to medium. Pour the whisked honey, soy sauce, minced garlic, rice vinegar, and grated ginger directly over the meatballs.
  4. Toss continuously for 3-5 minutes until the sauce bubbles and reduces into a thick, velvety glaze that clings to the meat.
