- 2 cups old-fashioned rolled oats
- 1 cup pitted and packed Medjool dates
- 0.5 cup creamy almond butter
- 0.25 cup ground flaxseed
- 2 tbsp chia seeds
- 0.5 tsp sea salt
- 1 tsp ground cinnamon
- 0.25 cup dark chocolate chips
- 2 tbsp honey
Instructions:
- Place the pitted Medjool dates in a food processor and pulse until they form a thick, sticky paste or ball.
- Add the almond butter, honey, sea salt, and cinnamon to the food processor. Pulse until the mixture is a smooth, combined wet base.
- Transfer the date mixture to a large mixing bowl. Add the rolled oats, ground flaxseed, chia seeds, and dark chocolate chips.
- Fold the ingredients together until the dry ingredients are fully incorporated and the mixture holds together when pressed.
- Using a small cookie scoop or tablespoon, portion the dough and roll into 20 uniform balls.
- Place the balls on a tray and chill in the refrigerator for 30 minutes to firm up before transferring to an airtight container.
