Ingredients:

  • 2 cups old-fashioned rolled oats
  • 1 cup pitted and packed Medjool dates
  • 0.5 cup creamy almond butter
  • 0.25 cup ground flaxseed
  • 2 tbsp chia seeds
  • 0.5 tsp sea salt
  • 1 tsp ground cinnamon
  • 0.25 cup dark chocolate chips
  • 2 tbsp honey

Instructions:

  1. Place the pitted Medjool dates in a food processor and pulse until they form a thick, sticky paste or ball.
  2. Add the almond butter, honey, sea salt, and cinnamon to the food processor. Pulse until the mixture is a smooth, combined wet base.
  3. Transfer the date mixture to a large mixing bowl. Add the rolled oats, ground flaxseed, chia seeds, and dark chocolate chips.
  4. Fold the ingredients together until the dry ingredients are fully incorporated and the mixture holds together when pressed.
  5. Using a small cookie scoop or tablespoon, portion the dough and roll into 20 uniform balls.
  6. Place the balls on a tray and chill in the refrigerator for 30 minutes to firm up before transferring to an airtight container.
