Ingredients:
- 2 cups (60g) fresh baby spinach, packed
- 1 tbsp (15g) pumpkin seeds
- 1 tbsp (10g) chia seeds
- 1 tbsp (15ml) blackstrap molasses
- 1 cup (240ml) fresh squeezed orange juice
- 1/2 cup (120g) frozen mango chunks
- 1 medium (120g) frozen banana, sliced
- 1/2 cup (120ml) Greek yogurt
- 1/2 tsp (2.5ml) vanilla extract
- 1/4 cup (60ml) water
Instructions:
- Pour the orange juice into the blender and add the baby spinach.
- Blend on high for 30 seconds until the liquid is bright green and no leaf fragments remain. Note: Doing this first prevents spinach chunks in your straw.
- Add the frozen mango and frozen banana slices.
- Add the Greek yogurt and vanilla extract.
- Add the pumpkin seeds, chia seeds, and blackstrap molasses.
- Blend on high for 45-60 seconds until the mixture is thick and glossy.
- Check the consistency. If it's too dense to pour, add water one tablespoon at a time.
- Blend for another 10 seconds until it reaches a velvety finish.
- Pour into two glasses and serve immediately.
