Ingredients:
- 1 cup (90g) rolled oats
- 2 medium (225g) overripe bananas
- 1 large (50g) egg
- 2 tbsp (30ml) melted coconut oil
- 1/2 tsp (2g) baking soda
- 1/4 tsp (1g) salt
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30g) mini chocolate chips
- 2 tbsp (30g) fresh blueberries
- 1 tbsp (16g) chia seeds
Instructions:
- Preheat your oven to 350°F (175°C). Place the rolled oats into the blender and pulse until they reach a fine, flour-like consistency.
- Add the bananas, egg, melted oil, baking soda, salt, and vanilla to the blender. Blend on high for 30–45 seconds until the batter is completely smooth.
- Pour the batter into a bowl and gently fold in the mini chocolate chips, fresh blueberries, and chia seeds using a spatula.
- Divide the batter evenly among the greased mini muffin tins.
- Bake for 10–12 minutes until the tops feel springy and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
