Ingredients:

  • 1 cup (90g) rolled oats
  • 2 medium (225g) overripe bananas
  • 1 large (50g) egg
  • 2 tbsp (30ml) melted coconut oil
  • 1/2 tsp (2g) baking soda
  • 1/4 tsp (1g) salt
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30g) mini chocolate chips
  • 2 tbsp (30g) fresh blueberries
  • 1 tbsp (16g) chia seeds

Instructions:

  1. Preheat your oven to 350°F (175°C). Place the rolled oats into the blender and pulse until they reach a fine, flour-like consistency.
  2. Add the bananas, egg, melted oil, baking soda, salt, and vanilla to the blender. Blend on high for 30–45 seconds until the batter is completely smooth.
  3. Pour the batter into a bowl and gently fold in the mini chocolate chips, fresh blueberries, and chia seeds using a spatula.
  4. Divide the batter evenly among the greased mini muffin tins.
  5. Bake for 10–12 minutes until the tops feel springy and a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
