Ingredients:
- 2 medium overripe bananas (approx. 200g)
- 1 large egg (50g)
- 1 cup (90g) quick-cooking oats
- 1/4 cup (60ml) whole milk
- 1/2 tsp (2.5ml) pure vanilla extract
- 1/4 tsp (1g) ground cinnamon
Instructions:
- Place the oats into a blender or food processor and pulse until they reach a fine, flour-like consistency.
- Add the overripe bananas, egg, milk, vanilla, and cinnamon to the blender.
- Blend on high for 30 seconds until the batter is smooth and pale yellow.
- Preheat your oven to 350°F (175°C).
- Grease a mini muffin tin thoroughly using coconut oil or non-stick spray to ensure a clean release.
- Pour the batter into the tins, filling each cavity about 3/4 of the way full.
- Bake for 10–12 minutes until the tops feel springy to the touch and the edges are barely golden.
- Allow the bites to cool in the pan for 5 minutes to let the structure set.
- Use a silicone spatula to gently pop the bites out of the tin and let them cool completely on a wire rack before serving.
