Ingredients:

  • 2 medium overripe bananas (approx. 200g)
  • 1 large egg (50g)
  • 1 cup (90g) quick-cooking oats
  • 1/4 cup (60ml) whole milk
  • 1/2 tsp (2.5ml) pure vanilla extract
  • 1/4 tsp (1g) ground cinnamon

Instructions:

  1. Place the oats into a blender or food processor and pulse until they reach a fine, flour-like consistency.
  2. Add the overripe bananas, egg, milk, vanilla, and cinnamon to the blender.
  3. Blend on high for 30 seconds until the batter is smooth and pale yellow.
  4. Preheat your oven to 350°F (175°C).
  5. Grease a mini muffin tin thoroughly using coconut oil or non-stick spray to ensure a clean release.
  6. Pour the batter into the tins, filling each cavity about 3/4 of the way full.
  7. Bake for 10–12 minutes until the tops feel springy to the touch and the edges are barely golden.
  8. Allow the bites to cool in the pan for 5 minutes to let the structure set.
  9. Use a silicone spatula to gently pop the bites out of the tin and let them cool completely on a wire rack before serving.
