Ingredients:

  • 1 cup (150g) Medjool dates, pitted
  • 1/2 cup (65g) Raw almonds
  • 1 tsp (5ml) Vanilla extract
  • 1/4 tsp (1.5g) Sea salt
  • 2 tbsp (15g) Sliced almonds, toasted
  • 1 tbsp (8g) Shredded coconut

Instructions:

  1. Place the pitted dates in a bowl of warm water for 5 minutes if they feel firm. Drain thoroughly and pat dry with a paper towel.
  2. Add the raw almonds, vanilla extract, and sea salt to a food processor. Pulse 5–7 times until the almonds are coarsely chopped.
  3. Add the dates to the processor and process until the mixture clumps together into a thick dough that pulls away from the sides of the bowl.
  4. Scoop approximately 1 tablespoon of dough and roll it between your palms until it forms a smooth, spherical ball.
  5. Immediately roll the ball in the toasted sliced almonds or shredded coconut until evenly coated.
