Ingredients:

  • 1 tbsp fresh ginger juice
  • 1 tbsp fresh lime juice
  • 2 tsp raw honey
  • 1 pinch sea salt
  • 8 oz chilled sparkling mineral water
  • 3 sprigs fresh mint leaves
  • 1 slice fresh lime wheel
  • Ice cubes

Instructions:

  1. Place the fresh mint leaves and the honey in the bottom of a highball glass. Note: This ensures the honey dissolves into the aromatics first.
  2. Gently press the mint with a muddler until you smell a strong herbal aroma, but be careful not to shred the leaves.
  3. Pour in the fresh ginger juice, lime juice, and the pinch of sea salt.
  4. Stir vigorously for 10 seconds until the honey is fully integrated and no longer clumping.
  5. Fill the glass to the brim with ice cubes. Note: Use large cubes so they melt slower and don't dilute the drink.
  6. Pour the chilled sparkling mineral water over the ice.
  7. Use a slow lift and fold motion to stir from the bottom up until the colors are blended but the bubbles remain.
  8. Garnish with a lime wheel and a fresh mint sprig.
