Ingredients:
- 1 tbsp fresh ginger juice
- 1 tbsp fresh lime juice
- 2 tsp raw honey
- 1 pinch sea salt
- 8 oz chilled sparkling mineral water
- 3 sprigs fresh mint leaves
- 1 slice fresh lime wheel
- Ice cubes
Instructions:
- Place the fresh mint leaves and the honey in the bottom of a highball glass. Note: This ensures the honey dissolves into the aromatics first.
- Gently press the mint with a muddler until you smell a strong herbal aroma, but be careful not to shred the leaves.
- Pour in the fresh ginger juice, lime juice, and the pinch of sea salt.
- Stir vigorously for 10 seconds until the honey is fully integrated and no longer clumping.
- Fill the glass to the brim with ice cubes. Note: Use large cubes so they melt slower and don't dilute the drink.
- Pour the chilled sparkling mineral water over the ice.
- Use a slow lift and fold motion to stir from the bottom up until the colors are blended but the bubbles remain.
- Garnish with a lime wheel and a fresh mint sprig.
