Ingredients:
- 2 large eggs (100g)
- 1 tbsp (14g) unsalted butter
- 1 tbsp (15ml) water or skim milk
- 1 pinch (1g) salt
- 1 pinch (0.5g) black pepper
Instructions:
- Crack the eggs into a mixing bowl. Add the water (or milk), salt, and pepper. Whisk vigorously until the yolks and whites are completely combined and no streaks remain.
- Place the non-stick skillet over medium-low heat. Add the butter and swirl until it is melted and foamy, but not browned.
- Pour in the egg mixture. Let it sit undisturbed for about 20 seconds.
- Using the silicone spatula, gently push the cooked edges toward the center, creating large, soft folds. Continue this slow movement, avoiding aggressive stirring.
- When the eggs look thickened and glossy—but still slightly wet—immediately remove the pan from the heat. Allow the residual heat to finish the cooking process for the remaining 30 seconds.
