Ingredients:

  • 2 large eggs (100g)
  • 1 tbsp (14g) unsalted butter
  • 1 tbsp (15ml) water or skim milk
  • 1 pinch (1g) salt
  • 1 pinch (0.5g) black pepper

Instructions:

  1. Crack the eggs into a mixing bowl. Add the water (or milk), salt, and pepper. Whisk vigorously until the yolks and whites are completely combined and no streaks remain.
  2. Place the non-stick skillet over medium-low heat. Add the butter and swirl until it is melted and foamy, but not browned.
  3. Pour in the egg mixture. Let it sit undisturbed for about 20 seconds.
  4. Using the silicone spatula, gently push the cooked edges toward the center, creating large, soft folds. Continue this slow movement, avoiding aggressive stirring.
  5. When the eggs look thickened and glossy—but still slightly wet—immediately remove the pan from the heat. Allow the residual heat to finish the cooking process for the remaining 30 seconds.
