Ingredients:

  • 6 cups (900g) fresh watermelon, cubed and seeds removed
  • 1/4 cup (60ml) freshly squeezed lime juice
  • 2 tbsp (30ml) agave nectar
  • 3 cups (710ml) lemon-lime soda
  • 1/2 cup (15g) fresh mint leaves
  • 4 cups crushed ice
  • Small watermelon wedges for garnish
  • Extra mint sprigs for garnish

Instructions:

  1. Place the watermelon cubes in a high-speed blender and pulse until completely liquefied.
  2. Pour the mixture through a fine-mesh strainer into a bowl to remove any fibrous pulp, ensuring a smooth finish.
  3. Pour the strained watermelon juice and agave nectar into the pitcher, stirring until the sweetener is fully dissolved.
  4. Take the 1/2 cup (15g) of mint leaves and give them a firm slap between your palms. Add them to the pitcher and use a wooden spoon to gently bruise them against the side.
  5. Just before serving, add the lemon-lime soda and crushed ice. Stir gently with a long-handled spoon to combine without losing carbonation.
  6. Garnish individual glasses with watermelon wedges and fresh mint sprigs.
