Ingredients:
- 6 cups (900g) fresh watermelon, cubed and seeds removed
- 1/4 cup (60ml) freshly squeezed lime juice
- 2 tbsp (30ml) agave nectar
- 3 cups (710ml) lemon-lime soda
- 1/2 cup (15g) fresh mint leaves
- 4 cups crushed ice
- Small watermelon wedges for garnish
- Extra mint sprigs for garnish
Instructions:
- Place the watermelon cubes in a high-speed blender and pulse until completely liquefied.
- Pour the mixture through a fine-mesh strainer into a bowl to remove any fibrous pulp, ensuring a smooth finish.
- Pour the strained watermelon juice and agave nectar into the pitcher, stirring until the sweetener is fully dissolved.
- Take the 1/2 cup (15g) of mint leaves and give them a firm slap between your palms. Add them to the pitcher and use a wooden spoon to gently bruise them against the side.
- Just before serving, add the lemon-lime soda and crushed ice. Stir gently with a long-handled spoon to combine without losing carbonation.
- Garnish individual glasses with watermelon wedges and fresh mint sprigs.
