Ingredients:
- 8 large Medjool dates (170g)
- 1/4 cup (60g) creamy peanut butter
- 1 pinch flaky sea salt
- 1/2 cup (90g) dark chocolate chips
- 1 tsp (5ml) coconut oil
Instructions:
- Using a sharp paring knife, slice each date lengthwise and carefully remove the pit to create a small cavity.
- Spoon approximately 1 teaspoon (5g) of peanut butter into each date, leveling the top with the back of the spoon, and top with a tiny pinch of flaky sea salt.
- Melt the dark chocolate and coconut oil in 30-second intervals in the microwave, stirring between each burst until the mixture is velvety and glossy.
- Dip each stuffed date into the chocolate using a fork, tap off the excess chocolate, and place on parchment paper.
- Chill in the refrigerator for 30 minutes until the chocolate shell is set.
