Ingredients:

  • 8 large Medjool dates (170g)
  • 1/4 cup (60g) creamy peanut butter
  • 1 pinch flaky sea salt
  • 1/2 cup (90g) dark chocolate chips
  • 1 tsp (5ml) coconut oil

Instructions:

  1. Using a sharp paring knife, slice each date lengthwise and carefully remove the pit to create a small cavity.
  2. Spoon approximately 1 teaspoon (5g) of peanut butter into each date, leveling the top with the back of the spoon, and top with a tiny pinch of flaky sea salt.
  3. Melt the dark chocolate and coconut oil in 30-second intervals in the microwave, stirring between each burst until the mixture is velvety and glossy.
  4. Dip each stuffed date into the chocolate using a fork, tap off the excess chocolate, and place on parchment paper.
  5. Chill in the refrigerator for 30 minutes until the chocolate shell is set.
