Ingredients:
- 12 large (approx. 10 oz / 280g) Medjool dates, pitted
- 1/4 cup (60ml) warm water
- 12 whole (approx. 1 oz / 28g) raw almonds
- 2 tbsp (32g) creamy almond butter
- 1g sea salt
- 1 tsp (5g) cinnamon powder
- 1 tbsp (15g) shredded unsweetened coconut
Instructions:
- Place the pitted dates in a bowl and cover them with warm water; let them sit for 10 minutes to soften. Remove dates using a slotted spoon and pat dry with a paper towel.
- Toast the raw almonds in a dry pan over medium heat for 3-5 minutes until fragrant and golden brown, then set aside to cool.
- Gently open the center of each date, spread approximately 2g of almond butter inside the cavity, and press one toasted almond firmly into the center.
- Pinch the date closed around the nut to secure it.
- Dust the treats with cinnamon powder and roll them in shredded unsweetened coconut for a finished coating.
