Ingredients:

  • 12 large (approx. 10 oz / 280g) Medjool dates, pitted
  • 1/4 cup (60ml) warm water
  • 12 whole (approx. 1 oz / 28g) raw almonds
  • 2 tbsp (32g) creamy almond butter
  • 1g sea salt
  • 1 tsp (5g) cinnamon powder
  • 1 tbsp (15g) shredded unsweetened coconut

Instructions:

  1. Place the pitted dates in a bowl and cover them with warm water; let them sit for 10 minutes to soften. Remove dates using a slotted spoon and pat dry with a paper towel.
  2. Toast the raw almonds in a dry pan over medium heat for 3-5 minutes until fragrant and golden brown, then set aside to cool.
  3. Gently open the center of each date, spread approximately 2g of almond butter inside the cavity, and press one toasted almond firmly into the center.
  4. Pinch the date closed around the nut to secure it.
  5. Dust the treats with cinnamon powder and roll them in shredded unsweetened coconut for a finished coating.
