Ingredients:
- 1 lb spaghetti
- 3 tbsp extra-virgin olive oil
- 4 cloves garlic, thinly sliced
- 1 tsp dried red chili flakes
- 1 can (28 oz) crushed tomatoes
- 1/2 cup pitted Kalamata olives, halved
- 2 tbsp capers, drained
- 2 cans (5 oz each) tuna in olive oil
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
Instructions:
- Bring a large pot of salted water to a boil. Add pasta and cook for 1–2 minutes less than package instructions. Reserve 1/2 cup of starchy pasta water before draining.
- Heat olive oil and 1 tbsp reserved tuna oil in a skillet over medium heat. Sauté sliced garlic and chili flakes for 60 seconds until fragrant.
- Stir in crushed tomatoes, olives, and capers. Simmer on medium-high for 10 minutes until the sauce thickens and turns deep red.
- Lower heat to low. Gently fold in drained tuna chunks. Add the undercooked pasta and reserved pasta water, tossing vigorously for 60 seconds to emulsify the sauce.
- Remove from heat. Stir in lemon juice, lemon zest, and chopped parsley. Serve topped with Parmesan cheese.
