Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) ground cinnamon
- 0.25 tsp (1.5g) salt
- 1 cup (115g) grated zucchini, squeezed dry
- 0.5 cup (110g) neutral oil
- 0.5 cup (100g) granulated sugar
- 1 large (50g) egg
- 1 tsp (5ml) pure vanilla extract
- 0.5 cup (90g) mini semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 24-cavity mini muffin tin or line with paper liners.
- Grate the zucchini. Place it in a clean kitchen towel and twist tightly to expel excess water until it feels like a damp sponge.
- In a large bowl, whisk together the flour, baking soda, cinnamon, and salt until no clumps remain.
- In a medium bowl, whisk the oil and sugar, then beat in the egg and vanilla until smooth. Fold in the squeezed zucchini.
- Pour the wet ingredients into the dry bowl. Gently fold with a spatula until just combined, then fold in the chocolate chips.
- Fill each muffin cavity about 3/4 full using a cookie scoop.
- Bake for 12–15 minutes, or until tops spring back and a toothpick comes out clean.
- Let muffins sit in the pan for 5 minutes before transferring to a wire rack to cool.
