Ingredients:

  • 1 slice Sprouted grain bread
  • 1/2 small ripe avocado
  • 1 tsp Extra virgin olive oil
  • 2 large pasture-raised eggs
  • 1 tsp Grass-fed butter
  • 1/4 tsp Sea salt
  • 1/4 tsp Red pepper flakes
  • 1/2 tsp Everything Bagel Seasoning
  • 1/2 tsp fresh lemon juice

Instructions:

  1. Toast the sprouted grain bread in a toaster or under a broiler until the edges are dark gold and the surface feels rigid.
  2. In a small mixing bowl, combine the avocado flesh, lemon juice, and a pinch of sea salt. Mash until mostly smooth with a few small chunks remaining.
  3. Heat a non-stick frying pan over medium-low heat and melt the grass-fed butter.
  4. Gently drop the eggs into the pan. Leave the eggs undisturbed for about 3 minutes until the whites are opaque and set but the yolks still jiggle.
  5. Spread the avocado mash evenly over the toasted bread, drizzle with olive oil, and top with the prepared eggs.
  6. Garnish with red pepper flakes and everything bagel seasoning before serving. Enjoy immediately while the yolk is warm and fluid.
