Ingredients:
- 1 ripe avocado (approx. 150g)
- 1 tsp (5ml) fresh lemon juice
- 1/4 tsp (1.5g) flaked sea salt
- 1/8 tsp (0.5g) cracked black pepper
- 2 large eggs (100g)
- 2 slices (60g) thick-cut sourdough or sprouted grain bread
- 1 tbsp (14g) unsalted butter
Instructions:
- Scoop the avocado into a small bowl.
- Mix in the lemon juice, salt, and pepper. Note: Use a fork to mash, but leave a few chunks for a better mouthfeel.
- Heat a skillet over medium heat with half the butter.
- Place the sourdough slices in the pan.
- Sear for 3 minutes per side until the bread is rigid and deep golden.
- Wipe the pan or use a second non stick skillet over medium low heat.
- Add the remaining butter and crack the eggs.
- Cook for 2-3 minutes until the whites are opaque and set.
- Flip the eggs for 30 seconds for over easy, or gently fold them for scrambled.
- Spread the avocado mash on the warm toast and top with the egg.
