Ingredients:

  • 1 lb rotini pasta
  • 1 tbsp salt
  • 2 tbsp unsalted butter, melted
  • 1/4 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 1/4 tsp sea salt

Instructions:

  1. Fill a large pot with water, add 1 tbsp salt, and bring to a boil.
  2. Add the rotini pasta and cook until al dente (usually 8-11 mins).
  3. Drain the pasta thoroughly in a colander.
  4. Rinse the pasta under cool water for 30 seconds Note: This removes excess starch and kills the cooked pasta smell.
  5. Transfer the pasta to an airtight container.
  6. Refrigerate for at least 2 hours until completely chilled.
  7. In a mixing bowl, whisk the melted butter, Greek yogurt, lemon juice, nutritional yeast, and sea salt until smooth.
  8. Fold the chilled pasta into the butter mixture, stirring gently until evenly coated.
